Four brands sell doorbells that record without a subscription on every model: Reolink, eufy, TP-Link Tapo and Lorex. Match one to your door:

Which doorbell cameras record without a subscription?
Every doorbell that Reolink, eufy, TP-Link Tapo and Lorex sell records to storage you own, with no plan. Wyze, Blink and Google Nest do it only with a condition attached. Ring and SimpliSafe keep no video at all without one, and Arlo promises only live view and alerts. The split runs by brand, not by model: within each of the four, every doorbell keeps video, and within Ring and SimpliSafe, none does without the plan.

"Works without a subscription" is printed on nearly every box here, and it is true of all ten in the narrow sense: the doorbell rings your phone and shows you who is there. What differs is whether anything is kept afterwards, which is the question this site answers for security cameras brand by brand, and the reason the table above has a column for where the video goes.
Which doorbells need nothing else to buy?
Two kinds. eufy's E340 and S330 keep clips on 8 GB built into the doorbell, and every Lorex doorbell ships with a 32 GB microSD card already inside. The rest take a card you buy separately, once, where a plan is paid every year. If you want to fit a doorbell and never think about storage again, those two are the only ones where that is true out of the box.
For the others, the card is the whole trick. It is what turns a doorbell that only shows you the step into one that keeps a record of it. Each maker states the largest card its doorbell takes, in the table below; SanDisk sells the SanDisk High Endurance microSDXC (with adapter)(paid link)as built for continuous recording in dashcams and security cameras.

Which doorbells work with no doorbell wiring?
All four brands sell battery doorbells that record to their own storage on battery alone. Wyze is the one to watch: its Battery Video Doorbell and Duo Cam Doorbell record locally only when they are wired. That catch is printed on Wyze's own product pages, in brackets, and it is covered on this site's page on the four Wyze doorbells.
Among the four brands that always record, the battery doorbells are Reolink's two battery models, eufy's E340, C31 and C30, Tapo's D205, D210 and D225, and Lorex's 2K battery model. Several of those can also be wired later, which is what unlocks the next section. Which doorbells record all day, not only when something moves?
Only when wired, and only some. Tapo's D225 and D130, Reolink's Video Doorbell WiFi and PoE, its Battery Doorbell (2nd Gen) on 16–24 VAC wiring, and eufy's C31 all state 24/7 recording on wired power. The ones with a battery record events, not a stream, while they run on it — which is how a battery lasts months instead of days.
Whether that matters depends on what you are watching for. A delivery or a visitor is an event, and every doorbell here catches events. Continuous recording is for the moment the motion sensor missed — somebody at the edge of the frame, or a parcel taken from the side. Reolink spells the switch out for its second-generation battery doorbell: motion-triggered on battery, 24/7 with pre-recording once it is connected to 16–24 VAC and switched to Wired Power Mode in the app.
Does a Ring doorbell record without a subscription?
No. Ring's own support page says a subscription is required to review recorded video on its cameras and doorbells, and that events are only recorded after you subscribe. Without a plan, a Ring doorbell lets you see live video and answer alerts as they happen, and keeps nothing.

What do Nest, Blink, Arlo and SimpliSafe doorbells keep?
Less than the four above, and in SimpliSafe's case nothing. Google keeps up to six hours of short video previews on the wired Nest Doorbell (3rd gen) and three hours on the battery one; SimpliSafe requires a monitoring plan for recordings. Blink depends on which Sync Module is on the shelf.
The four that come with a condition, and the two that keep nothing
- Google Nest: up to six hours of short event previews with no plan on the Nest Doorbell (wired, 3rd gen), three hours on the Nest Doorbell (battery), and only photo snapshots of the last three hours on most older models.
- Blink: the Battery Doorbell 2K+ needs a Sync Module to work at all. Clips are saved locally only to a USB drive on Sync Module 2 or a card on Sync Module XR, and Blink's list of devices that can do that names the Video Doorbell but not yet the newer 2K+ doorbells. Sync Module Core saves nothing.
- Wyze: the Video Doorbell v2 records to a card; the Battery Video Doorbell and the Duo Cam Doorbell do so only when wired; the Video Doorbell Pro takes no card at all.
- Arlo: live view and motion alerts without a plan; video cloud storage needs one. The doorbell page offers Arlo's SmartHub, which stores recordings through a USB port, as a compatible accessory, and does not say the doorbell records to it.
- SimpliSafe: "Watch camera recordings for 30 days" — followed by "Monitoring plan with camera recordings is required."
- Ring: no recordings at all until you subscribe.

Two of those deserve a second look before buying. Nest's free previews are real video, but a parcel taken at eleven in the morning has gone from a three-hour window by two in the afternoon — the Nest page has the full answer. And Blink's answer changes with a box that is not the doorbell: the Blink page explains which module does what. Every one of the ten will still send you a notification without a plan; it is the recording that differs.
What does a doorbell with no plan still miss?
An off-site copy. A card in the doorbell leaves with the doorbell if someone takes it, and Lorex sells its cloud plan on exactly that point — protection against "physical camera theft or vandalism". That is the honest case for a subscription, and it is the one thing a card cannot answer.
What local storage does not do, in the makers' own small print
- It is not off-site. If the doorbell is taken, the card goes with it. Lorex lists "physical camera theft or vandalism" among the things its optional cloud plan protects against.
- It fills up. Lorex states that a full card overwrites the oldest recordings, and eufy estimates the S330's 8 GB lasts up to 90 days at 25 fifteen-second clips a day.
- Some extras still touch the cloud. eufy states that notifications with thumbnail previews need the images "temporarily stored in the cloud"; Reolink lists rich notifications on its first battery doorbell as needing Reolink Cloud.

None of that is hidden; all of it is on the makers' own pages. It is a trade, and it is better known before the doorbell goes up than after.
Corrections
